Chickpea – Escarole Mediterranean Soup

Soup:
Vegetable Stock (garlic, carrot, leek, mushroom)
Escarole
Fennel
Onion
Tomato
Orange

Chickpeas (dried preferably)

Garlic
Bay Leaves
Oregano

Veggie-Fruit Smoothie

Ingredients:
Green Apples
Spinach
Strawberries
Blueberries
Banana
Lemon

Recipe:
Wash everything. Cut off strawberry stems. Slice and remove apple cores.
I typically use 2 apples, half a box of spinach, 5 strawberries, a handful of blueberries, and a quarter banana.
Add about a cup of water (distilled/filtered) to a blender.
Add in fruit and veggies.
Squeeze in a quarter lemon.
Add little ice to blender to make it cold.
Blend to desired granularity.

Tips:
I like to peel the apples, think it makes it taste better but it also helps if apples give you gas 😉
If you put in tupperware and refrigerate it’ll last about 2 days.

Ingredients:
Fish:
Fish (Cod)
Flour
Bread Crumbs (Panko)
Salt/Pepper
Egg
Dill
Leek
Lemon
Olive Oil

Chips:
Potato
Salt/Pepper
Paprika
Cajun Spice

Dipping Sauce:
Mayonnaise
Worcestershire Sauce
Lemon
Sriracha
Leek

Recipe:
Fish:
Follow Gordon Ramsay’s method to prepare and batter the Fish. Salt raw fish and let rest to allow it to firm. Coat in seasoned flour. Bathe in egg mixture w/ squeeze of lemon. Coat in Breadcrumb,salt/pepper,Dill,Leek.
Pan fry with olive-oil at medium-low heat. I cover the skillet when cooking the first side, then uncover when flipped.

Chips:
Peel, chop and blanch potatoes. Season with Cajun Spice, Paprika, etc. Bake at 350 for half-hour. Gordon Ramsay puts the chips in a slices of buttered bread loaf, like a sandwich, but I think this is a recipe for constipation.. so just eating them like fries works also.

Dipping Sauce:
Mix Mayo, Worcestershire sauce, Lemon and Sriracha in quantities to taste.

Tips:
Cod fish work real well.
I Like Panko for the breadcrumbs.
Sweet potatoes are good for the chips.
Covering the skillet when cooking the first side of the Fish, then uncover when flipped – helps cook the fish on all sides and not burn the batter.
